Vucculotti Sapa and Nuts

This first dish with a purely autumnal and sweet and sour taste contains one of the most particular ingredients of Marche cuisine: sapa.

It is freshly squeezed grape juice syrup, left to boil until reduced to a third of the initial amount. The seasoning of vuccolotti(macaroni) is obtained by mixing the sapa with breadcrumbs, chopped nuts and olive oil.
